Heat oil in pan and brown beef for about 5 mins. Reduce heat and add onions and a little salt and pepper. and cook until onions soft. Add bouquet garni and more seasoning if required.
Transfer to the slow cooker. Add stock, stir, then add carrots celery and barley. Cover and cook on low for 6 - 8 hours or high for 3 - 4 hours. Add mushrooms for last 20 minutes. Discard bouquet garni and add more seasoning if needed. Serve with crusty bread.
