Wash and dry the strawberries. Prepare strawberries - remove stems and cut in half. Place the berries in a blender and puree. Blend until smooth. Get a fine sieve and place over a mixing bowl, pour the pureed berries into the sieve.
Using a spatula, push the mixture through the sieve to remove the seeds. Add icing sugar, stir in until dissolved. Store in the fridge until ready to serve for instance with Cornish Fairings or scones instead of jam or over ice cream.
