  • 1.5kg (3lb) Venezia potatoes, halved, or quartered, if large
  • 2 tbsp beef dripping
  • 3 garlic cloves
  • 3 thyme sprigs
  • 3 rosemary sprigs

  1. Preheat the oven to gas 6, 200ºC, fan 180ºC. Put the potatoes in a pan of salted water, bring to the boil and then simmer for 10 minutes.
  2. Put the beef dripping in a roasting tin and heat in the oven with the garlic, rosemary and thyme, until melted.
  3. Drain the potatoes in a colander, and then shake vigorously to rough up the edges.
  4. Carefully tip the potatoes into the hot roasting tin and toss in the dripping. Roast for 30-40 minutes, turning after 15 minutes, until golden. Serve with Christmas dinner.
