This foolproof recipe will ensure even first timers get crispy yet fluffy roast potatoes. Make sure this all important Christmas dinner trimming is perfect for the big day, and roast with garlic, rosemary and thyme for a great flavour.
Preheat the oven to gas 6, 200ºC, fan 180ºC. Put the potatoes in a pan of salted water, bring to the boil and then simmer for 10 minutes.
Put the beef dripping in a roasting tin and heat in the oven with the garlic, rosemary and thyme, until melted.
Drain the potatoes in a colander, and then shake vigorously to rough up the edges.
Carefully tip the potatoes into the hot roasting tin and toss in the dripping. Roast for 30-40 minutes, turning after 15 minutes, until golden. Serve with Christmas dinner.
