Wash, dry and stab 2 blue belle potatoes
Place in the oven and cook on gas 5 for 45 mins
Take out of the oven, cut in half and scoop the potato into a bowl. Return the skins to the oven for more crisping!
Add diced red pepper and creme de la brie into the bowl and mix together.
Scoop the filling back into the shells and add a sprinkling of grated cheese over each one. Return to the oven for 15 minutes.
For crispier skins rub in olive oil and sprinkle with salt
