Lightly toast pitta breads.
Slice each pitta in half, lengthways through the middle.
Split the red onion chutney between the pitta halves and spread to cover the edges.
Layer blue Brie on top of chutney.
Lightly toast under grill until bubbling and golden.
Serve on a bed of rocket leaves.
