Preheat oven to 200°C. Make a deep slit in the side of each chicken breast to form a pocket.
Cut the cheese into 8 pieces and put a piece into each pocket, then place chicken breasts into a shallow dish.
Mix together the cream, half the mustard, pour around the chicken.
Melt the butter; add seasonings, herbs and remaining mustard. Brush onto the chicken and bake for 40 minutes or until golden.
Served topped with peppercorns.
Prepare the whole thing ahead of time, cover with Clingfilm and just pop into the oven 40 minutes before you want to serve the dish.
Fantastic for dinner parties or where you have large numbers to cater for - numbers only limited by the size of dish you cook in. You can scale this up for 30 people! And it's simply delicious.
