  1. Put the walnuts, Stilton, rocket and a generous amount of black pepper into a small food processor with the softened butter. Whizz until combined and smooth. Transfer to a ramekin, cover with clingflim and chill until needed.
  2. Serve a little over rib-eyed steak or toss through freshly cooked pasta.
