A quick and yummy muffins recipe that can be adapted easily depending on the fruit/flour you use. This time made with buckwheat flour and delicious home-grown pears and some of Tesco‘s scrumptious blueberries – easy peasy healthy and delicious!
1. Preheat the oven to 350°F / 180°C / GM 4. Line a muffin tin with paper muffin/cake cases. Mix flour, baking powder, baking soda, salt, cinnamon, ginger powder and the oats in a large mixing bowl.
2. Combine syrup, sugar and applesauce in a separate bowl. Combine the two mixtures, then add the blueberries and pear. Mix well.
3. Spoon a generous amount of the cake mixture into each muffin/cake case (be very generous as these muffins do not rise very much at all!). Bake in the oven for 25-30 minutes or until a toothpick comes out clean.
