As a young mum I worked in a lovely old country pub and one of the regulars a very elderly old chap used to keep us enthralled with stories of his time in service up at the big house and this was one of the recipes according to him that was enjoyed for afternoon tea by the ladies.
put water / sugar / and butter/marge into a saucepan and bring to boil - leave to cool . Add 1 large egg 2 cups Self raising flour almond essence mixed spice and put in 8 inch tin and bake for one and half to two hours testing with a skewer after one and half hours.
Use any fruit that suits your taste and a little more or perhaps less if you prefer won‘t spoil the the this lovely cake.
