Heat the oil in a large pan and fry the onion gently for about 3 minutes to soften.
Add the red cabbage, orange zest and juice, ground mixed spice, brown sugar and vegetable stock to the pan. Cover and cook very gently for 20 minutes, stirring everything a couple of times.
Stir in the chopped apple, add about 3 tablespoons of water and cook for another 20 mins, until the cabbage and apples are tender. Check the seasoning and then serve.
