Pre-heat the oven to 180°, gas mark 4 and butter and line the base of a 20cm non stick square tray.
Break the bread into small pieces and place into a large mixing bowl. Add the muesli, dried raisins and mixed spice. Pour in the yogurt and and milk, mix well and leave for 15 minutes to soak.
Mix in the eggs and Muscovado sugar and stir well. Add the melted butter and sprinkle over the demerara sugar. Pour into the tin and bake for 1 hour until firm & golden. Leave to cool, turn out and remove the lining paper. Cut into generous squares.
Use your fingers to break up the bread, squeeze together and enjoy!
