Coat a 6 cup muffin tin with non stick spray.
Preheat the oven to 180°C, 350°F, Gas mark 4.
In a medium non stick frying pan cook the sausages until browned. Remove the sausages, add the pepper and onion and sauté over a medium heat for 5 minutes.
Meanwhile, cut the sausages into pieces and divide between the muffin tin. Beat the eggs in a bowl and add the mushrooms, season well. Divide the sautéed onion and pepper into the muffin tin and top with the egg mixture.
Sprinkle with the cheese and bake for 20 minutes or until the egg is set.
Cooks Tip: Make this recipe your own by adding your favourite seasonal ingredients, salmon and spring onion for summer and sausage and bacon for winter!
