Lay out a slice of meat on a clean board and spread with a little mustard. Top with a small spoonful of coleslaw,
a few gherkins and cress. Season with black pepper.
Fold the meat around the coleslaw and spear with the fork or a toothpick, or balance the rolls on a fork. Repeat with the remaining meat. Arrange the forks on a platter and scatter with cress.
