These light orangey melt-in-the-mouth biscuits are simple and quick to make.
Cream the butter and sugar in a large bowl. Stir in the flour and zest.
Put the mixture into a piping bag, and pipe 20 small circles onto a well-greased baking tray.
Alternatively, you can just place spoonfuls of mixture onto the tray.
Bake for 8 – 12 mins at 180 C, 350 F Gas Mark 4 until the colour starts turning brown. Remove from oven and cool slightly, then carefully transfer onto a wire rack to complete cooling.
Warm the jam in the microwave or a pan, and sandwich the buttons together, in pairs.
Sprinkle with icing sugar.
You don't need to use a piping bag, spooning the mixture on the tray is equally effective!
