Broccoli and Stilton mornay recipe

Al dente broccoli smothered in creamy mornay sauce and grilled until golden. Broccoli and Stilton mornay is a brilliant alternative to cauliflower cheese and is a comforting and delicious accompaniment to any main meal.

Cook the broccoli in a pan of boiling salted water for 3 minutes, then drain. Leave to steam dry a little, then transfer to an oven dish and scatter over half the pumpkin seeds. Set aside until needed.

Preheat the grill to a medium heat. To make the mornay sauce, melt the butter in a pan and stir in the flour to form a paste. Add the milk, a little at a time, stirring continuously until it becomes a sauce; making sure each addition comes to the boil before you add more milk.  Add the bay leaves and leave to simmer for 2-3 minutes, then melt in the cheddar and blue cheese. Season to taste.

Pour the cheese sauce over the broccoli, and then scatter with the remaining pumpkin seeds. Cook under the grill until bubbling and golden. Serve with fish or grilled meats, such as sausages.

This meal is exceptionally rich so should be enjoyed only as a rare treat.
