preheat the oven to 220°C/200°C Fan/Gas 7
Mash the potato, brussels sprouts and carrots together and season to taste.
Bind together with an egg yolk.Chill the mixture.
Divide the mixture into 8 and pat into cakes.
Place them on a baking tray and bake for 20 to 25 mins.
This is a great way to use up your left over vegetables. I often like to season mine with a little nutmeg for extra flavour.
