Burmese rice recipe

Easy to make, quick, and not much washing up!

Put rice on to boil in salted water, using about 3 times the amount of water to rice.

While the rice is cooking, fine/medium dice the onion and chop the garlic - fry gently in another saucepan in the butter, stirring frequently.

Add curry powder and continue to cook. Roughly dice the fresh tomatoes and add to the onion mix, cook for a further 2-3 minutes and take the saucepan off the heat.

Rice should almost be cooked, either way strain the water of the rice but do not wash - add to the onion and tomato mix,  stir in (season if required) and then add grated cheese. Though you could eat the dish at this point you could finish it off by putting it in any suitable ovenproof dish, sprinkling on a little cheese and popping in a medium pre-heated oven until its piping hot and the cheese has melted.

Serve this as a snack or with salad, with whatever you like. this is a tasty snack and a filling meal.


You could vary ingredients - add pepper, a little tomato puree in the initial onion frying stage for a richer taste. My personal favourite is to add a little mango chutney.
