Butter beans offer a tasty, nourishing alternative to potatoes and this quick and easy mash recipe, from television cook and author Jo Pratt, is great for cooking on a budget. Flavoured with sage, it's the perfect side dish to a hearty Sunday roast dinner.

Heat the olive oil in a large saucepan and add the garlic and chopped sage. Cook gently for about 1 minute until the garlic is softened but not coloured.

Add the butter beans and stock. Increase the heat and cook for 3-4 minutes, stirring frequently until the beans are hot. Use a potato masher or fork, to break down the beans to a chunky mash.

Stir in the lemon zest, season to taste and stir through the cream for a richer finish, if you like.
