Peel and de-seed the butternut squash and chop into small pieces. Place in a baking tray and lightly drizzle with oil. Roast in an oven on 200c for 30 minutes.
Chop the bacon and fry in a large pan, then add the finely sliced mushrooms.
Cook the pasta according to the directions on the packet.
Add the can of tomatoes to the bacon and mushrooms. Add the basil plus salt and pepper to taste.
When the butternut squash is cooked, add to the pan with rest of the ingredients.
Drain the pasta and add to the pan and stir all the ingredients together.
Serve with a sprinkling of parmesan cheese.
