Butterscotch apples with ice cream HERO

Peel, core and slice the apples into 1cm (½in) thick pieces. Heat a large frying pan with 1 tbsp of the butter and add the apples. Sauté for 5 minutes or until soft. Remove, set aside and wipe the pan clean.

Reuse the pan to heat the golden syrup over a medium-low heat. Add the sugar and cook, without stirring, for 8-10 minutes or until the mixture turns golden. Remove from the heat and whisk in the double cream until incorporated. Whisk in the butter and the vanilla extract.

Add the apples back to the pan and warm through. Serve with vanilla ice cream.
