Preheat the oven to 200°C. Arrange the mushrooms, cherry tomatoes and bay leaf in a large roasting tray. Drizzle with the olive oil and balsamic vinegar and season generously. Roast for 12-15 minutes until the mushrooms are brown and soft. Remove and spoon into serving bowls. Garnish with more flaked sea salt and a few sprigs of thyme before serving.
