Heat the oil in a large casserole dish and brown the ribs all over.
Once browned, add the onion, garlic, pepper and carrots and fry for 5 minutes or until they are soft and slightly coloured
Blend tomatoes in the blender until smooth and then add them to the vegetables and ribs along with the tomato puree, mix it well and let it cook for 5 minutes
Now pour the chicken stock into the pan, add the chopped cabbage, bay leaves, and a little sea salt and black pepper
Cover with a lid and leave to boil. Once it’s boiling, reduce the heat and leave it to simmer for 40-45 minutes
When the cabbage is nice and soft, quickly stir in your mashed potato, couscous and squeeze of lemon
Leave to rest for 10 minutes, serve with some sour cream and fresh bread.
