Sprinkle the Cajun spice over the chicken. Heat the oil in large heavy-based pan and add the chicken. Fry for 10 mins, turning regularly until browned all over.
Pour over the boiling water or chicken stock, add the mushrooms, cover and simmer for 15 mins.
Stir in the gravy granules and cream, if using. Warm through for a few mins, stirring until gravy thickened and smooth.
Serve with rice, if you like.
