I really love cajun spices, and using them on steak is a lovely alternative to my usual chicken breast. The steak has a better depth of flavour and combined with the fluffy mash, broccoli and carrots, it is definitely my comfort food.
Start off by peeling and chopping the potatoes, carrots and broccoli. Put the chopped potatoes into cold, salted water and put on a medium heat to bring to the boil.
Meanwhile, put the broccoli and carrots into a separate pan of cold water over a medium heat and bring to the boil.
Whilst the vegetables are coming to the boil, place the two steaks into a bowl with the olive oil and cajun seasoning and leave to marinate for a few minutes. If you like your food hot & spicy, you can always prepare this step the night before and leave the steaks marinating overnight.
Get a griddle pan very hot and place the marinated cajun steaks in the hot pan cook through depending on your preference.
After 20-25 minutes, take the potatoes off the heat as long as they are fork tender, and mash with your choice of butter or milk.
Drain off the carrots and broccoli and place on the plates.
When the steak is cooked to your liking, take off the heat and leave to rest for a few minutes. Slice up and place over some fluffy mash.
