We made this after our holiday to Lake Garda, Italy where we got engaged. We tried to recreate the romantic Mediterranean atmosphere with the popular Campari Aperitif Cocktail that we loved so much outside the bars on a lazy sunny evening next to the lake. The freshness of sweet British Berries and contrasting sourness of Pink Grapefruit gives this classic Italian a British twist. Very moreish.

The night before place a single berry of choice in each individual compartment of the ice cube tray, cover with mineral water and freeze overnight.

Mix the Campari, Vodka and Liqueur together in a cocktail shaker and stir. Add a dash of Grapefruit to balance the bitter sweet flavours. Place the ice cube/s into champagne flutes and pour over the cocktail mixture, finish off with good quality fizz and serve with canapés or alone as an aperitif.

Try using Rose‘ Fizz to bring out the flavour of red fruits and pour over two halved strawberries or a whole raspberry for a romantic twist. Ice cubes optional.

  • Top up with Good Quality Prosecco, Cava or Champagne - Sparkling Wine
  • Garnish Berries - Blackberry, Strawberry, Raspberry or a few Blueberries
