Halve the tomatoes and scoop out the pulp and seeds. Finely dice the tomato flesh and combine with the mango, green chilli pepper, red chilli, white wine vinegar, olive oil, lemon juice and seasoning.

Chill the mixture until you are ready to serve it. When you are ready to serve, spoon tablespoons of the salsa onto the slices of bread. Top with a prawn and garnish with a sprig of oregano before serving.

  • 2 sandwich baguettes, cut into 1cm thin slices
  • sprigs of oregano, to garnish
  • small handful of frisee lettuce, to garnish
  • For the salsa

  • 1 mango, de-stoned and flesh finely diced
  • 4 plum tomatoes, blanched
  • ½ green chilli pepper, de-seeded and very finely diced
  • 1 small red chilli, de-seeded and very finely diced
  • juice of ½ lime
  • 1tbsp white wine vinegar
  • 1tbsp olive oil
  • salt
  • pepper
