Mix all the marinade ingredients in a food processor. 

Place chicken pieces into a large bag or plastic container and cover with marinade. Seal bag or cover the container and shake to coat the meat in marinade mixture. Leave in fridge for 4 hours or overnight and turn occasionally.

Remove chicken from marinade and thread onto skewers alternating with pieces of fruit and onions.

Grill or BBQ until thoroughly cooked through with no pink showing and the juices run clear. 

Serve hot with rice or couscous

  • 1kg chicken breast meat in large cubes
  • 1 pineapple prepared and chopped into ½ thick triangles
  • 1 mango, prepared and chopped into large cubes
  • 2 red onions, chopped into large chunks
  • For the jerk marinade

  • 3 green onions, chopped
  • 60ml sunflower or corn oil
  • 2tbsp dark brown sugar
  • 3 cloves garlic, minced
  • 2 limes, juiced and zested
  • 2tbsp orange juice concentrate
  • 3tbsp jerk seasoning
  • 1tsp Jamaican hot sauce
  • 1tsp salt
  • wooden skewers soaked in water for 1-2 hours or metal skewers
