Add a splash of worcestershire sauce and red wine.
Add the mushrooms, peppers, onions and courgettes.
Stir, cover, if you like and cook for 1 hour.
Serve the chicken with boiled rice (and the rest of the wine).
Heat the oven to 200C (180C fan), gas 6. Put the canned tomatoes into a casserole dish.
Add the chicken thighs, seasoning, garlic, paprika and herbs and drizzle with olive oil.
