Grease a 8 inch tin and line with baking parchment.

In bowl, sift flour,cinnamon and baking powder and add brown sugar.

Peel and grate carrots and apple ,add almonds and sultanas, tip in with flour mixture.

Add eggs and vegetable oil, beat together, put into tin and bake for about 1 hour on 180 C

To make pink cheese frosting, mix cream cheese , butter, icing sugar , rind of orange and pink colouring. spread on cake once cool.

check after 45 mins with skewer as can cook quicker. Ideal for charity coffee mornings.
