Carrot and Ginger Soup recipe

Fry onion in a large saucepan in oil over low heat for 5 minutes

Add carrots and ginger. Saute for an additional 5 minutes

Pour in stock and simmer for 10 minutes or until carrots are tender

Liquidise with a handblender and serve

A dollop of creme fraiche doesn't go a miss!
