Chop all veg, heat oil, soften veg for few minutes. Add stock, soy sauce, nutmeg and season to taste. Bring to boil then add orange juice. Simmer for 15 minutes. Blend in processor, return to pan and check seasoning. Serve sprinkled with coriander.
Freezes well. The better the carrots the better the flavour of the soup, so it is best to use good carrots.
