Carrot and Parsnip Soup recipe

Cook the chopped onion in the butter for 5 mins or until soft.

Add the carrots, parsnips and vegetable stock. Bring to the boil and then simmer for 5 mins.

Use a blender to blend the soup until there are no lumps.

Sprinkle with parsley and serve.
