Set the oven to 180C, 160C fan, Gas 4. Grease and line a 23cm (9 inch) tin.
Whisk the sugar and oil together, then add the eggs and whisk until pale and fluffy. Fold in the flour, baking powder, cinnamon and carrots.
Gently stir in the milk and then pour into the prepared cake tin.
Bake for 40 minutes until risen and a skewer inserted in the centre comes out clean.
Cool on a wire rack. Cover with vanilla or chocolate frosting if you like, serve when ready.
