My youngest son's favourite dish. Everytime I make it, it reminds me of my childhood because my Mum used to make it.

Grate the carrots.

Fry grated carrots in ghee or butter.

Add sugar.

Add evaporated milk and cream. Bring to boil.

Once the mixture has thickened, add the spice and the nuts. Leave a few nuts to scatter over the top.

Mix and leave to set.

Serve with ice cream or double cream. Or as a healthy alternative, serve with Greek yoghurt mixed with honey.
