Preheat the oven to gas 6, 200ºC, fan 180ºC. Put the oil in a large roasting tin and toss the veg in it. Cook in the middle of the oven for 35 minutes, then remove.
Sprinkle over the caraway seeds and stir in the honey and lemon. Cook the veg for another 5-10 minutes until sticky and just golden.
