Boil the potatoes and cook the sausages.
Mash the potatoes and add spring onions, place this at the bottom of a casserole dish (Reserve a quarter for topping).
Slice the sausages in half and place them on top of the base of champ (potatoes and spring onions). Slice the onions and place on top of the sausages. Then chop the chillies and place on top of the onions.
Finally, top the dish with the remaining champ, and place in a preheated oven at 100° C for 30mins.
When topping is brown, pour gravy over and place back in oven for 5 minutes.
