A great way to use up a mixture of dried fruits, you can add any combination to this cake and it will be delicious!
This recipe is best planned the day before as you‘ll need to soak the fruits beforehand. To start weigh out your dried fruit and leave to soak for 30 minutes in a bowl with the boiling water and chai teabags.
Remove the teabags and add the sugar and ginger to the mixture, leaving it to soak overnight to fully infuse.
The following day before finishing the rest of your cake mixture, pre heat the oven to 180c/160c fan/gas mark 4 and grease a loaf tin ready for your cake.
To finish your cake mix you need to simply add the egg and flour and blend well. Then pour the mixture into the cake tin and bake for 1 hour - 1 hour & 1/4, or until a skewer comes out clean.
Leave the cake to set in the tin for an hour then remove and leave to cool.
