Chop the onion and gently fry in a little olive oil. When the onion is soft, add the chopped garlic.
Add the chopped tomatoes, mix with the onion and garlic and cook slowly till soft, but not mushy. Add lemon juice, salt and pepper. Make 4 holes in the mixture and break an egg into each one (cook the eggs to your liking)
This is such a simple dish that no hints or tips are needed. Students could cook this as a change to eating baked beans! It is nice served with crusty bread, which is also useful for mopping up!
