Preheat the grill to high. Put the beef, onion, parsley, cumin, coriander and paprika in a large bowl. Add some seasoning and mix well until all the ingredients are combined.

Divide the mixture into 8 and shape into flat sausages, then thread a soaked wooden skewer through the middle. Cook the koftes under the grill for 15 minutes, turning regularly until cooked through and golden.

To make the tzatziki, combine the yogurt, mint and cucumber in a small bowl and mix well. Season to taste and set aside. Serve the koftas with the tzatziki, and let everyone stuff their own pitta bread, with some hot peppers and salad on the side, if you like.
