Break the egg into a bowl and whisk thoroughly, add the pork mince and stuffing mix and mix with your hands until well combined and a large ball is formed.
Press into a lightly greased loaf tin and place in oven on gas mark 4 for 1 hour and 40 minutes.
Allow to rest before turning out and slicing.
Tips: I like to serve this with "cheat's apple gravy" - make up half a pint of gavy granules according to instructions then add a 180g jar of bramley apple sauce and mix well, and "leeky mash" - sauté 1 large thinly sliced leek in butter then mix thoroughly into fluffy mash potatoes.
