Cheeky chicken sandwich recipe

Spread the slices of bread with the reduced fat spread.

Place the lettuce on a chopping board and, with some help from an adult, shred it into thin strips. You can use the fork to secure the leaves as they’re cut. Then wash and drain the lettuce strips.

Wash the tomato before slicing it – again with some help from an adult.

Place the chicken on top of one slice of bread. Or, you could swap the chicken for two slices of ham or two 15ml spoons of hummus (just leave out the spread if you’re using hummus).

Cover with the shredded lettuce and tomato. Top with a second slice of bread. Cut the sandwich into quarters with some help from an adult. Serve on a plate for a fantastic lunch.
