This is one of my aunt's favourite recipe. We love it too.
Divide the pastry into 2 pieces.Roll out half of the pastry. Line the bottom of a20cm pie plate. Arrange the cheese and the onions in the pie plate.
Roll out the other half of the pastry to cover the top of the pie. Trim off the excess pastry. Press and seal the edges. Make a vent in the centre of the pie.
Bake the pie in the centre of the oven (220C/425F/Gas7) for 25-30 minutes till the pastry is golden brown.
