My mum attends a weekly coffee group of about 12 ladies.They choose a friends house for the venue. She provides coffee. One of the group takes sandwiches, one savoury one fruit and one sweet. Mum had to take savoury and didn‘t remember until the night before, with an appointment to attend before the gathering. Puff pastry in the freezer, eggs and cheese in the fridge.....

Beat egg. Grate cheese Unroll pastry and lightly roll to increase size by a third. Lightly flour baking sheet. Cut pastry in half (You will have enough for two batches) Egg wash half the pastry. Cut 1 1/2 cm wide strips from the egg washed pastry and lie on baking sheet about half a centimetre apart.. Sprinkle with half the grated cheese and lightly season. Bake in oven for 10 minutes top shelf until lightly golden. repeat for second batch.

Remember cheese can be salty, so watch seasoning. Once cooked, use a pizza wheel to cut pastry strips and hold on to base of strip as you cut. Prepare second batch whilst first batch is cooking. Cut between cheese straws with pizza wheel, as the straws will be easier to sererate. Leave on sheet for 5 minutes before removing with fish slice and leave to cool on wire rack. Best eaten warm.
