My Mum used to make this year‘s ago and once she shared her recipe, I experimented with different fruits and alcohol to ring the changes. It‘s my most popular dessert now and family and friends always ask me to make it for their party‘s!!
Melt the butter and add the biscuit crumbs and mix well. Put into a loose bottomed tim and bake for approx 5 mins. Beat the cream cheese, gin and flour, sugar, vanilla, the eggs and soured cream until flurry and lighter in colour. Stir in the strawberries and raspberries. Put on top of the biscuits and back for about 40mins. Cool. Decorate with some raspberries and if you have time, make a nice coulis with some raspberries, gin, cream and icing sugar to decorate the plate (as in my photo)
Don‘t overcook the filling as it is nicer just cooked as the mixture does tend to firm up on cooling! I ring the changes with this mixture by adding different fruits and alcohol according to the Seasons.
