Make the crumb topping by combining the breadcrumbs, cheese, herbs and seasoning.
Mix together the mayonnaise and minced garlic and smooth this first over the fish followed by the breadcrumb mixture.
Slice the tomato‘s and lay in a baking dish, top with the baby spinach leaves followed by the fish fillets on top. Finish the fish with a good drizzle of olive oil.
Bake for 20-25 minutes gas Mark 6/7 until the top is golden and crispy.
You can omit the cheese and use any herb you prefer, or change the spinach for kale or similar. Also delicious with pesto instead of the garlic mayo. Can substitute with any similar white fish.
