I came up with this recipe - which isn‘t strictly Italian, we named it after the colours in the dish which are the same as the Italian flag - red (salsa), green (pesto) and white (chicken and cheese) when looking in a rather empty fridge one evening and wondering what I could throw together to make a quick and tasty meal. It‘s now a firm family favourite and easily adapted using any ingredients you have to hand
Carefully slice the chicken breasts through the middle to open out into a ‘butterfly‘ and place in an oven proof dish
Smother with green pesto and salsa
Sprinkle on plenty of grated cheese - cheddar works well (our recent favourite is Tesco‘s Finest Mature Somerset Cheddar), but try other flavours!
Smoked cheese is good and tasty, as is any cheese with onions or chives in it.
Cover the dish with foil and cook at 180 degrees for approximately 30 minutes, take the foil off for five minutes and baste the chicken with the delicious juices, crisp the cheese up a little and serve!
Enjoy that cheesy chicken with a big serving of mashed potato with cheese and gently fried leeks stirred through, and your choice of vegetables.
Or for a more healthy option serve it with boiled new potatoes and salad; you can also use low fat cheese in place of the full fat variety.
To serve more people just use an extra chicken breast per person plus extra pesto, salsa and cheese!
A quick and easy meal to prepare for all ages as you can vary the heat of the salsa. Oh, and for those who like it hot you can also sprinkle on sliced pickled chillies and / or sliced pepperoni before cooking!
