This was a raisin biscuits recipe. I run out of raisin one day but I found some cherries in the cupboard. So I chopped them up and used them for biscuits. They are delicious. I make them an give them to friend for Easter.

Grease 2 baking trays. Preheat oven to 200C/ Gas 5 .

Cream butter and sugar together with an electric mixer till light and fluffy. Add in lemon rind, cherries and flour. Add in beaten egg to form a soft dough.

Turn the dough out onto a flour board. Roll out to 5mm thickness. Use a 6cm round cutter and cut into 20 round biscuits.

Transfer onto baking trays. Bake in a preheated oven 200C/ Gas 5 for 10 minutes. Leave to cool.

For special occasion, dip the biscuits into melted chocolate and leave to set.
