I'm a chef at a 5star hotel.
I love yoghurt and decided to make homemade compote for my own. The kids love it and so do I.
Remove stalks and stones from cherries
Cut into quarters.
Place in pan with a tablespoon of water.
Add the sugar and star anise.
Bring to the boil stirring constantly, then simmer for 10-15 minutes until the compote has begun to thicken and the cherries have started to break down, add the kirsch if using. The compote will begin to darken.
Once thickened and the colour has darkened, remove star anise and leave to cool.
Will last in the fridge for 5 days.
Use on yoghurt. Ice cream, desserts, porridge or anything that tickles your fancy!
The compote can be frozen down into smaller portions and defrosted easily when needed.
If your cherries are slightly sour add 50g of sugar extra per 200g of cherries.
