Preheat your oven to 170c. Dice your potatoes into even thicknesses and place in a pan of water and bring to a boil. Simmer until soft enough to mash.
In a sperate pan, divide the brocolli into smaller florets and par boil until just tender. Finely dice the onion and colour gently over a medium heat.
Dice your chicken breasts and add to the onions. Cook until you get a nice brown colour on your chicken.
Mash the potatoes with a little butter and set aside whilst you make the sauce.
In a sauce pan over a medoum heat, melt the butter for the sauce. Once melted add the flour and combine to make a roux. Add half the milk and stir until it becomes a sauce and thickens then add the remaining milk and parsley and combine until thickens. Remove from heat.
To the sauce add your chicken and onions and the drained brocolli and fold together.
Now it is time to bake, in a baking dish add the sauce mix and cover with the mash, don't worry if you don't have enough mash to cover the whole pie as this is meant to be so.
Bake in the oven for approx 30 mins then sprinkle over the breadcrumbs and cheese and bake for a further 10 to 15 mins.
Remove and serve.
