Chicken and Mushroom Rigatoni recipe

Chicken and Mushroom Rigatoni

Melt butter, stir in flour and cook for 1 minute

Gradually add chicken stock, stirring, to make a smooth sauce (it should be very thick)

Season well with black pepper and add mushrooms and grated lemon zest

Bring to the boil and simmer very gently for around 10 minutes until the mushrooms are nearly cooked

Meanwhile, bring a large pan of salted water to the boil and cook the rigatoni according to the instructions on the packet

Add the lemon juice and diced chicken to the sauce and continue to simmer until the chicken is thoroughly warmed through

Stir through the cream and gently warm through. Check the seasoning, adding salt, black pepper or lemon juice to taste

Drain the pasta, stir into the sauce and serve, sprinkled with chopped parsley
